Replicas of the Palais Adelmann mold are now available.
Imagine serving the same Springerle designs that guest and friends were treated to at the Palais Adelmann in Germany during Christmases of the 1800′s.
The Palais Adelmann replica mold measures about 11 3/8” x 6 1/2” and will produce 12 individual cookies or confections that will measure about 2 1/2” x 1 3/4”each. Each individual framed scene was masterfully carved and will deliver a stunningly beautiful work of edible art for you just as it had for the bakers at the Palais Adelmann in the 1800’s. Just the borders alone that frame each image is a work of art. The cookies produced from this mold are all very detailed with great depth and dimension. The original mold was used at the “Palais Adelmann” in Ellwangen Germany. There it was used always during the Christmas season for baking Springerle. This mold is #1700 and sells for $198.00. Producing this mold was a great achievement. Never have these images been available in such a small size. Producing this final mold took us months and a great deal of time and resources. The end result is a mold that carries the same fine details as the original and its own special history.

Why I began producing molds
Just as it was necessary for me to teach myself about baking Springerle, I found myself learning how to produce copies of antique Springerle, Gingerbread and Spekulatius cookie molds. I looked for a company that could produce copies for me but I was not able to find one that could do what I required. I insisted on food safe resins and other components. The search for qualified folks that could tackle this project for me began. After months of research and correspondences I believe this new partnership will be able to deliver what I was looking for.
As a baker, I designed these molds with the baker in mind to be durable and user friendly so they may not appeal to the collector. Although I do suspect the new and different designs will appeal to all that bake Springerle or other molded cookies and want something unique. These molds will not have a stain on them so there will never be anything to flake or wear off onto your dough.
